When storing your knives, it is best to use a wooden block or special knife holder. Knives stored incorrectly can injure you and will become dull must faster.
A sharp knife allows you to have better control of the blade. A dull knife requires you to work harder to direct the path of the blade. If your knife is not sharp, more force will be required making it less safe.
There are many ways to check to ensure your knife is sharp. The paper test is very common. An additional way is to hang the blade on your finger nail, much like fishermen might check the sharpness of their fishing hooks. To keep your knife sharp, use wooden cutting boards. Bamboo is the best type.
The honing steel that comes with most knife sets has two purposes. First, it removes food caught in the micro edge making the knife appear to be dull. The homing steel removes or backwashes the edge returning it to its original condition. The second purpose of honing steel is to straighten the micro edge that will often lay over when cutting on a cutting surface.
